Ingredients

  • 2 x teaspoon sunflower or olive oil 
  • 1/2 onion, chopped 
  • 2 x garlic cloves, crushed 
  • 2 cm piece of fresh ginger, peeled & grated 
  • 1 x tablespoon garam masala 
  • 1 x teaspoon ground turmeric 
  • 1 x teaspoon ground cumin 
  • 1 x tablespoon ground coriander 
  • 3 x tablespoon fruit chutney 
  • 1 x can of mixed vegetables in brine, drained, we used a curry version 
  • 1 x can of green beans in brine, drained 
  • 1 x can of chopped tomatoes 
  • 1 x can of beans of your choice, we used speckled sugar beans

  • Salt and pepper to taste 
  • Some coriander (or fresh herbs of your choice) to taste and to garnish
  • 4-5 x panini breads, hollowed out as per video (keep the insides for dipping and eating) – you can work on one panini per person  

Instructions

  • Heat your oil in a large saucepan or pot and fry the onions until they are soft and golden
  • Now add the garlic, ginger, spices and chutney and fry everything for a minute or two. 
  • Add all the canned goods.          
  • Now cover your pan or pot, and let it all simmer over a low heat for 10 minutes. 
  • While it simmers, hollow out your panini breads by cutting a square rather deep into the small breads. Take care not to cut too deep or too close to the edge as you don’t want the bread to break. The square should be like a little door.
  • Once your mixture is ready scoop generously into the hollowed-out bread. 
  • Add salt, pepper and fresh herbs to taste. 
  •  Enjoy by dipping your cut out/ hollowed out pieces of bread in the mixture.

You can also use half a loaf of bread of your choosing or any kind of roll or small bread if its relatively sturdy in order to cut.
