Sweet Potato Porridge

Ingredients

  • 1 medium sweet potato, cooked + peeled 
  • 1 small apple
  • 1 tbsp ground flaxseed (for topping)
  •  1/4 cup plant milk
  • 1/2 apple, sliced (for topping)
  • 1 handful raisins (for topping)

Instructions

  • Cut and core apple before adding to a small pot and boiling until tender     
  • To a blender, add plant milk, cooked apple and sweet potato
  • Blend until smooth 
  • Transfer to a small pot (adding more plant milk if needed) to reheat before serving 
  •  Add toppings,  serve and enjoy!
