Pumpkins fritters
(aka pampoen koekies)
They are light , fluffy and literally melt in your mouth
Ingredients
- 500g grated pumpkin
- 1 tsp ground ginger
- 1 tsp cinnamon
- 1/2 cup sugar
- 2/3 cup flour
- 1 tsp vanilla essence
- 1 tsp baking powder
- Pinch of salt
Instructions
- Mix the sugar into the grated pumpkin and add the spices, baking powder and vanilla essence, mixing it in until it is well incorporated
- Add the flour to the mixture a bit at a time until all the flour has been mixed in
- Your fritter mixture is now ready
- Heat a good amount of vegetable oil in a non-stick frying pan over medium high heat
- Take a heaped tablespoon of the fritter mixture and shape it to your liking, scrape it into the heated oil and let fry for 2 - 3 min a side before flipping them around for another 2 - 3 min on the other side
- Once fried, transfer each fritter to a paper towel to remove the excess oil
- The fritters should be slightly crispy on the outside and soft on the inside
