Pumpkins fritters
(aka pampoen koekies)

They are light , fluffy and literally melt in your mouth

Ingredients

  • 500g grated pumpkin
  •  1 tsp ground ginger
  • 1 tsp cinnamon  
  • 1/2 cup sugar
  • 2/3 cup flour
  • 1 tsp vanilla essence
  • 1 tsp baking powder 
  • Pinch of salt

Instructions

  • Mix the sugar into the grated pumpkin and add the spices, baking powder and vanilla essence, mixing it in until it is well incorporated 
  • Add the flour to the mixture a bit at a time until all the flour has been mixed in 
  • Your fritter mixture is now ready 
  • Heat a good amount of vegetable oil in a non-stick frying pan over medium high heat 
  • Take a heaped tablespoon of the fritter mixture and shape it to your liking, scrape it into the heated oil and let fry for 2 - 3 min a side before flipping them around for another 2 - 3 min on the other side 
  • Once fried, transfer each fritter to a paper towel to remove the excess oil 
  • The fritters should be slightly crispy on the outside and soft on the inside
