Chia seeds and mango pudding
A simple mango chia pudding to satisfy your summer cravings
Ingredients
- 1 x can light coconut milk
- Enter text here
- 5 tablespoons chia seeds
- 1 tablespoon liquid sweetener
- 1/2 ripe mango
- 1/2 teaspoon pure vanilla extract
- Tiny pinch kosher salt
- Toppings of choice mango and grapes
Instructions
- In a blender combine, coconut milk, mango, vanilla and sweetner of your choice.
- Blend until combined.
- Pour the liquid mixture In a medium mixing bowl stir add salt and chia seeds and mix well so that the chia seeds are evenly distributed throughout.
- Cover and refrigerate for at least 30 minutes for better results.
- Once out of the fridge add your other half of mango and grapes for topping.
